Rum Chicken Marinade and Pineapple Red Pepper Relish

The Lazy Cook strikes again, slashing recipes in half.   Yes, I am the Lazy Cook because there are a million different things I would rather be doing than in the kitchen slaving over a hot stove.   Well, since you asked.  I would rather be reading a book, sitting by the pool, writing, walking on hot coals, or anything that doesn’t require me to sit and watch food cook.

My latest victory is Rum Chicken Marinade.  I am trying to eat healthier these days and so cool marinades are what I am all about.  Marinades add the extra flavor to your meats and veggies without using a ton of salt.   The main ingredient for the Rum Chicken Marinade is rum, not so much that you will be drunk but just enough to add a little bit of flavor.  I also added some brown sugar and honey to my marinade the recipe doesn’t call for it but I wanted a sweet tinge to my chicken.   Another major step I excluded was pulling out that nasty old grill.   Grills are way too much work.  I would rather stay inside in the ac and use the oven.  So I purchased this nifty little pan-oven grill.  It gives the same affect as grilling, the aesthetic little browning lines, and all that stuff.   Some people want the charcoal taste, that isn’t important to me, I would much rather taste the marinade than charcoal smoke.  We are living in the 21st Century folk there is no need for us to smell like charcoal or our food to taste like it.   A matter of fact there is no need to cook outside.
